Banana Spice Muffins
1 spice cake mix
2 ripe bananas, mashed
1 pkg (8 oz.) cream cheese, softened
1/2 cup powdered sugar
1/4 cup finely chopped pecans
Preheat oven to 350 degrees. In a small bowl stir until well blended cream cheese, sugar and pecans. Refrigerate 30 minutes. In another bowl mix cake according to package. Add mashed bananas. Line muffins tins with paper liners. Fill muffin tins about 1/2 full. Spoon 1 tsp. of cream cheese mixture into the center of each muffin. Bake 20 minutes.
This can be changed by changing the cake mix flavor. You can eliminate the banana but when using a spice cake mix, it tones down the spicy flavor some. You can change the filling from nuts to chopped raisins, cranberries, dried pineapple, etc. This makes a wonderfully moist muffin. It can even be made into cupcakes and iced if you want.
